Nestled in the hills of Alsace, Katzenthal is the picture-postcard villlage where Clément Klur farms a modest 7 hectares of land. He works totally organically which means he eschews the use of pesticides and adheres to biodynamic principles that sees the vineyard as an entire ecosytem. There are fruit trees alongside the vines and animals roam to their heart’s content. This biodiversity helps keep the land rich and is paramount in producing an utterly delicious white wine. The slopes are steep so all grapes are hand harvested meaning only the best are picked and none are damaged. The winemaking process starts with a 6hour slow press again to ensure the delicacy of the wine and wild yeasts are used to bring out the minerality. A refined Pinot Gris that can be sipped by itself or with a classica Alsatian pork dish.
