It’s SPARKLING. It’s JUICY. It’s SENSATIONAL…

In the village of Vrigny, this boutique organic champagne house still ploughs the fields by horse. This is not some touristy gimmick but instead a technique that prevents the soil from being too compact, allowing oxygen to flow through it and thus fill it with healthy nutrients for the vines. In fact everything about the way this champagne is made is dedicated to time, care and attention to the natural world. Certified organic and practising biodynamic farming, the vineyard is designed to let the grapes thrive and be a true expression of the terroir (a beautiful French word that means the combination of climate and geological factors).

This champagne is a rarity as it is crafted with 100% Pinot Meunier grapes. It is also subject to a rare technique called ‘pied de cuve’ a process used in natural winemaking to employ natural yeasts. Once that process was complete in stainless steel tanks, the wine was aged on the lees in the bottle for six years! Ageing on the lees gives it that classic creamy champagne texture and, although this definitely has a richness to it, we’ve classed it as JUICY because of the phenomenal green apple and lime that races through it.
