It’s SPARKLING, it’s FRESH, it’s SENSATIONAL…
Devaux is in the southern realms of Champagne, so far so that the vines are planted on Burgundian soils of Kimmeridgian marl and Portlandian limestone. It fits then that Devaux are pinot noir specialists and this is 100% pinot noir. The grapes come from organically farmed plots of land (the chateau has been working for 15yrs to be certified). The effort was worth it! They only use the first press and ferment in stainless steel to protect the vibrancy and freshness of the fruit. The wine goes through malolactic fermentation and before bottling is blended with organic reserve wine from previous vintages – a signature of the Devaux winemaking technique. This beautiful sparkling wine has delicate flavours of honeysuckle, stone fruit, toast as well as brioche and almond with a slightly saline finish. Complex is the word!
