It’s SPARKLING, it’s RICH, it’s SUPERB…
Devaux is in the southern realms of Champagne, so far so that the vines are planted on Burgundian soils of Kimmeridgian marl and Portlandian limestone. It fits then that Devaux are pinot noir specialists. Although there is some Chardonnay in the blend the majority of this is Pinot and it gives the wine a distinct richness both on the palate and the nose. 20% of the wine is from reserve wines from previous vintages. This plus, the malolactic fermentation and 36months on the lees develops a beautiful mousse quality to the champagne. It really is divine.
